Apple Bourbon Goat Cheese Flatbread

YUMMMM!  This is an easy, no fail flatbread recipe!  Enjoy!

Ingredients

13.8oz can of Pillsbury Pizza Crust

1 Medium Red Onion

2 Fresh Apple

1 tbsp Olive Oil or Avocado Oil

1 pinch of salt

1 tbsp Chopped Parsley

1.5 oz Bourbon

4oz Goat Cheese

Directions

Preheat the oven to 350 degrees, and grease a rimmed baking sheet with butter.

Cut the apple and red onion into thin slices.

Stretch the Pizza Crust out either by hanging it with your hands a bit or by rolling with a rolling pin, make sure there are no holes at the bottom, and place it in the pan with extra crust hanging out the side. 

Put a large pan on medium heat and add the olive oil or avocado oil. 

Once the oil is warm, add the onion slices and cook until soft. Then add apple slices, a pinch of salt, and parsley. Cook for 15 minutes on medium. 

Turn heat to high and bring mixture to a simmer. Pour in bourbon and cook for 2-3 minutes. Move back down to medium heat and cook until onions are a savory brown. 

Spread the onions and apples across the raw pizza crust, and arrange small crumbles of goat cheese on top of the mixture. Fold the sides of the pizza crust inward. 

Bake for 20 minutes or until the crust has a golden brown.
