One Bite… And Everyone Requests This Recipe!
My Famous – And surely The World’s Best – Lemon Balls!

2 1/2 cups of all-purpose flour
1 1/2 cups soften butter
1 cup cornstarch
2/3 cup powdered sugar
4 tablespoons of lemon juice
3 tablespoons of grated lemon zest
1 cup + 2 tbsp of powdered sugar (plus more for rolling)
1/2 cup butter softened
2 1/2 teaspoon freshly grated lemon zest
2 teaspoon lemon juice
Sift dry ingredients together.
Combine lemon juice, lemon zest and softened butter with dry ingredients.
Beat at low speed until well mixed.
(It will look like it’s too dry to mix together but just give it a minute or two and it will come together.)
Form into an inch long log. Wrap in plastic.
Refrigerate for 2 hours.
Heat oven to 350 degrees.
Cut each log into 1/4-inch slices. (Bigger cookies will just fall apart.) Place 2-inches apart on an ungreased cookie sheet.
Bake 7 – 9 minutes. (Cookies will not brown. Don’t overcook!)
(These cookies will be dry and crumbly. Don’t panic!)
Combine butter, powdered sugar, lemon juice and lemon zest. Mix at medium speed, until fluffy.
(Add a couple of drops of yellow food dye if you like!)
Take cooled cookies and toss them into the secret ingredients. Mix well.
Roll into bite-sized balls.
(This will hold the cookie together and turns them into mouthwatering delights!)
Freeze cookie balls for 30 minutes.
Dust with powdered sugar.
Freeze again. Keep frozen until ready to serve.
Serve these frozen!
(Store these cookies in the freezer!)
