3 large, very ripe Bananas
3/4 cup of white Sugar
1 tsp. of Baking Soda
1 tsp. Baking Powder
1/2 tsp. Salt
1-1/2 cups of all-purpose Flour
1/3 cup of Butter, melted
1 cup of chopped Walnuts or Pecans
Mix all dry ingredients together. Set aside.
Gently mash the bananas. Add sugar and slightly beaten egg. Add the melted butter.
Add dry ingredients.
Stir together softly. (Too much stirring makes tough muffins.)
Pour into muffin tins. (2/3’s full)
Bake at 375 degrees for 20 minutes or until edges are golden brown.
