Grandma’s Old Fashion Egg Delight Sandwich

Ingredients

9 hard-boiled eggs, chopped

1/4 cup of sour cream

1/3 cup of fresh spinach, chopped

1/2 cup of carrots, shredded

1/2 cup of stuffed olives, chopped

6 English Muffins

6 slices of bacon, fried crisp and crumbled

1 cup of sharp cheddar cheese, grated

Directions

In a large bowl, combine eggs, sour cream, spinach, carrots, and loves. Mix together.

Split English muffins in half. Toast muffins and spread lightly with butter.

Spread egg mixture over each muffin half. Sprinkle with cheese and bacon.

Bake until cheese melts and sandwich is warm all the way through.

Serve open-faced.
