The Best Cherry Cheesecake Recipe

This delicious, foolproof recipe works with any fruit. The recipe is the same. So get to it and impress your friends!



5 eggs

1 1/2 cup sugar

3 – 8 oz. packages of cream cheese (room temperature)

1 tsp. vanilla


vanilla wafers

3 tsp. butter


frozen cherries

3 tsp. butter

3 tablespoons sugar (more if you wish)

(I add 2 to 3 tablespoons of Amaretto just because!)


Cream eggs, sugar, cream cheese and vanilla together.

Crush vanilla wafers pour melted butter on, stir. Press into spring pan.

Wrap bottom half of pan in foil. Pour batter on top.

Place in roasting pan. Fill it with water, approximately 1/2 way up side of the pan.

Cook at 325 for 1 hour.

Remove cake from water/roasting pan. Cool 20 minutes. Run a paring knife around edge. Cover and chill in refrigerator.

Topping ~ Melt butter in sauce pan. Add cherries. Cover with sugar.

Heat, let it make a syrup.

Place cheesecake on serving plate. Top with cherries and syrup.

Chill for an hour or more.
