Italian Herb and Cheese Crusted Chicken

Ingredients:

1/2 cup mayonnaise (I used Kraft but any brand will work)
1/4 cup shredded Italian cheese
4 boneless chicken breasts
5 tablespoons Panko bread crumbs
1 teaspoon Italian seasoning
Salt and pepper for sprinkling on chicken after baking

Steps:

1) heat oven to 425 degrees F
2) mix mayo, Italian seasoning and cheese in a small bowl
3) line casserole pan with foil for easy clean up and lay chicken inside
4) spread the mayo mixture on top of each breast evenly
5) use 1 tablespoon per breast of the bread crumbs to sprinkle on top. The 5th tablespoon is just used for extra coverage and crunchiness
6) place in oven for 20-25 minutes or until chicken is cooked through then turn on the broiler for 3 minutes to get the tops a little brown and crispy.
7) dash some salt and pepper on top of desired.

Enjoy!

Pair the chicken with some vegetables (I cut up a potato), drizzled olive oil over it, added some lemon pepper seasoning and you have the protein and veggies knocked out.
