An easy, tasty, HEALTHY snack!

Ingredients
2 cups cauliflower florets
1 cup minced onion
½ cup shredded pepper jack cheese
½ tsp. garlic salt
½ tsp pepper
½ cup bread crumbs
1 tbsp. minced cilantro
Optional: Ketchup, Ranch dressing
Directions
Microwave 2 cups of cauliflower florets 10-12 minutes or until soft.
Pour softened florets onto cutting board and mince finely with a knife.
Preheat oven to 375 degrees
Pour minced cauliflower into a medium mixing bowl. Stir in onion, pepper jack cheese, garlic salt, pepper, bread crumbs, and cilantro.
Shape 1-2 teaspoons of the mixture into an oval shape with your hands and place on a greased baking sheet.
Put the sheet on the middle rack of the oven and bake for 15 minutes or until the tips begin to brown.
Then, flip the tots.
Place them back in the oven for another 10 minutes.
Let cool for 2 minutes, then serve with ketchup or ranch dressing.

I prepared these today for tomorrow’s lunch. They smelled so good that my husband couldn’t wait until tomorrow, he really liked them! I’ve been trying out new recipes to vary our side dishes and veggies, and this will definitely be added to our rotation. I did do some modifications. I added one egg to the mixture because the tots wouldn’t hold. Also, I used shredded mozarella (instead of pepperjack)and garlic powder and sea salt (instead of garlic salt) because that’s what I had on hand. Thanks for the recipe!
