Superman’s Cheesy Chicken Casserole

My nephew swears Superman eats this and loves it!

Your kids will too!

Ingredients

(Serves 5-6)

4 medium potatoes, cubed

4 boneless, skinless chicken breast, cubed

⅓ cup vegetable oil

1 tsp. garlic salt

3 tbsp. salsa verde

1 tsp. lemon pepper

1 cup white onion, diced

1 tbsp. minced cilantro

1 medium diced bell pepper (I used red, but any color will do.)

6 cups shredded pepper jack cheese

Directions 

Preheat oven to 400 degrees.

Mix the vegetable oil, garlic salt, salsa verde, lemon pepper, diced white onion, minced cilantro,  and diced bell pepper together in a large bowl.

Stir in the chicken and potato cubes until evenly coated with oil and spices.

Pour the ingredients into a greased, 13X9” pan.

Scatter 4 cups of shredded pepper jack cheese over the top.

Bake for 20 minutes, then take out and stir. Cover with another 2 cups of shredded pepper jack cheese.

Bake for another 25 minutes or until potatoes are soft.

Let cool for five minutes, then serve.

(Hint: Superman eats his with sour cream, salsa, and sautéed cherry tomatoes on top!)
