Oatmeal Raisin Cookies

Makes 1 to 2 dozen cookies

Ingredients

½ cup unsalted butter, softened

½ cup brown sugar

½ cup white sugar

½ tsp. vanilla extract

1 egg

¾ cup of flour

½ tsp. baking soda

½ tsp. salt

1 ½ cups minced old-fashioned oats

½ cup raisins

Directions

Whisk together butter, sugars, vanilla, and egg in an electric mixer until smooth.

Sift flour, salt, and baking soda and beat together on low until creamy. 

Stir in oats and raisins on low until combined. Place dough in freezer for 10 minutes.

Preheat oven to 350 degrees.

With 2 spoons, scoop 1 teaspoon of dough in a ball onto a greased cookie sheet. 

Repeat, separating the balls of dough by two inches.

Bake for 6 to 8 minutes or until the sides begin to brown.

Let cool for 5 minutes on a wire rack or clean surface.

Then enjoy.
