Lemon Love Notes are sweeter than a lemon bar and a little less tangy. Wonderful for those who want less bite in their lemon dessert!
Ingredients:
1/2 cup butter, softened
1 cup flour
1/4 cup confectioners’ sugar
2 T. lemon juice
Rind of 1 large lemon, grated
2 eggs, beaten
1 cup sugar
2 T. flour
1/2 tsp. baking powder
Directions:
Preheat oven to 350 degrees.
Combine butter, 1 cup flour and confectioners’ sugar. Mix well. Make a crust by pressing mixture into a 9-inch square baking pan. Bake for 15 minutes. Cool.
Combine lemon rind, juice, eggs, sugar, 2 T. flour and baking powder. Mix well. Spread on baked crust. Bake for 25 minutes.
Vanilla Icing
Ingredients:
3/4 cup confectioners’ sugar
1/2 tsp. vanilla
1 T. butter, softened
1 1/2 T. milk
Directions:
Combine all 4 ingredients. Beat until smooth. Ice lemon bars.
