World’s Best Lemon Balls

These REALLY are the best lemon balls in the world!

My Famous – And surely The World’s Best – Lemon Balls! 

Try them!  

(You can thank me later!)

Cookie Ingredients:

2 1/2 cups of all-purpose flour

1 1/2 cups soften butter

1 cup cornstarch

2/3 cup powdered sugar

3 tablespoons of lemon juice

3 tablespoons of grated lemon zest 

 

Secret Ingredients:

1 cup + 4 tbsp of powdered sugar (plus more for rolling)

1/2 cup butter softened

2 1/2 teaspoon freshly grated lemon zest

2 teaspoon lemon juice

6 Graham Crackers (crumbled)

Directions:

Sift dry ingredients together.

Combine lemon juice, lemon zest and softened butter with dry ingredients.

Beat at low speed until well mixed.

(It will look like it’s too dry to mix together but just give it a minute or two and it will come together.)

Form into an inch long log. Wrap in plastic.

Refrigerate for 2 hours.

Heat oven to 350 degrees.

Cut each log into 1/4-inch slices. (Bigger cookies will just fall apart.) Place 2-inches apart on an ungreased cookie sheet. 

Bake 7 – 9 minutes. (Cookies will not brown. Don’t overcook!)

Cool.

(These cookies will be dry and crumbly. Don’t panic!)

 

The Secret:

Combine secret ingredients. Mix at medium speed, until fluffy. 

(Add a couple of drops of yellow food dye if you like!)

Take cooled cookies and toss them into the secret ingredients. Mix well.

Add 6 crumbled graham crackers to the mixture. Mix.

Roll into bite-sized balls.

 (The secret ingredients will hold the cookie together and turns this into a mouthwatering delight!)

Roll in powdered sugar.

Freeze cookie balls.

Keep them in the freezer until you are ready to serve them.

(Store these cookies in the freezer!)
